Paneer Pasanda
Ingredients:
- Purabi Paneer (cottage cheese): 2 cups
- Ghee: 2 tbsp
- Refined Oil: 1 Tbsp
- Garam masala (powder): 1 tsp
- Purabi Cream: 1/2 Tbsp
- Purabi Milk: 1 cup
- Salt: as per taste
- Sugar: a pinch
- Cumin (whole): 1/2 tsp
- Bayleaf: 1 -2
- Freshly grounded black pepper: 1/2 tsp
Make a smooth paste with:
- Onion: 1 cup (roughly chopped)
- Cashew nuts (soaked): 1 Tbsp
- Garlic Cloves: 6
Method:
- Heat a pan with little amount of oil and fry the paneer cubes and keep aside
- Heat ghee in a kadhai, add cumin or jeera and bayleaf. Let them splutter.
- Now add the onion-garlic-cashew paste and sauté on a medium flame for 2 minutes.
- Cook until the raw smell disappears. Now add salt and garam masala and mix.
- After a minute or two add on milk and sugar and continue cooking on medium heat.
- Add 2 tbsp of water and stir. Wait for about 3/5 minutes and add paneer cubes, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Now add pepper and finally the cream. Mix well and remove from the heat.
- Serve hot.
