Your Bihu Treat With A Twist!
These two simple and unique recipes can be served as desserts and/or side dish in any occasions or parties at home.
Fruit and Custard Kheer
Ingredients:
- Soaked Basmati rice: 1 cup
- Red grapes, Apple diced, Bananas: 1 cup
- Vanilla Custard Powder: 1 Tbsp
- Purabi Milk: 1 Liter
- Butter: 1 cube
- Saffron: a pinch
- Sugar: 3/4 cups
Method
- Heat a pan and boil milk. Add the rice.
- Make a mix of milk and custard powder in a pan.
- Prepare the fruits and dice them. Discard seeds and peels.
- Heat butter and add the fruits and half of the sugar and cook till the fruits become tender
- Pour the custard powder to the kheer and add the remaining amount of sugar.
- Now add the softened fruits, stir and remove from the flame.
- Serve chilled with fresh fruit slices on top.
PHIRNI
Ingredients
- Rice soaked: 1 Cup
- Purabi Milk: 1 litre
- Saffron (kesar): a pinch
- Sugar: 3/4 cup
- Green cardamom powder: 1/2 teaspoon
- Pistachios and almond (optional): blanched, peeled and sliced 10-15
Method
- Drain and grind the rice to a coarse paste and set aside.
- Bring milk to a boil and add rice paste dissolved in a little water or cold milk.
- Cook till rice is completely cooked, stirring constantly. Add saffron and mix well.
- Add sugar and cardamom powder and cook till sugar is completely dissolved.
- Pour into earthenware or china bowls and garnish with pistachios.
- Chill in a refrigerator for an hour before serving.
