Gajar ka Halwa
Ingredients

Carrots – 1 kg

Purabi Milk – 1 ½ litres

Green cardamoms - 3
-
Purabi Ghee – 5-7 tbsp
-
Sugar - 5-7 Tbsp
-
Raisins - 2 Tbsp
-
Almonds - 1 Tbsp shredded

Dates - 2 Tbsp chopped
Method
-
Peel and grate the carrots.

Simmer in milk and add cardamoms until liquid evaporates.

Heat ghee in a pan and add the carrot & milk mixture.

Cook for 10-15 minutes over a gentle flame.

Stir in sugar as per the taste required and continue cooking until the halwa turns deep reddish color and gives off a delicious aroma.

Stir in the dried fruits and serve.
